Posted October 14, 2018 07:54:51 The oldest of four children, she grew up in a rural community in rural eastern Pennsylvania where she was raised by her mother, who is a certified teacher.
“I don’t think I could have done anything without her,” said Katie.
She graduated from high school in 2003 and went on to receive her Bachelor of Science degree in public health and a Master of Science in social work.
She worked as a nurse and nurse assistant for nearly 15 years.
“My family is very rural and we don’t have a lot of transportation, so we’ve always had to make do with what we had and try to make it work,” Katie said.
“It’s been a lot for me.”
Katie is a grandmother of four.
She was a stay-at-home mom and was a teacher before she started teaching in 2010.
“We don’t know what we’re going to do in the future, but it’s always been something I’ve wanted to do,” Katie added.
“And I think it was really the right thing to do.”
Katie has been doing her own cooking for the past few years and has been working at home with her family since she returned from working at a nursing home.
Katie is preparing for her fifth birthday this fall, and is already preparing her family for the holidays.
“A lot of my friends who live outside of Philadelphia are getting married,” she said.
It was a long road back to the community Katie grew up, but she believes it was worth it.
“The food is really good,” she added.
Katie’s grandma is also a certified nurse assistant and has a Master’s Degree in social and behavioral sciences from the University of Pennsylvania.
She says she is a huge fan of the food, but has always been able to adapt to the way it is cooked.
“You never really know what’s going to happen at any given time.
I do know that you don’t want to cook something too hot or too cold, and it is important to cook things that are easy to digest, and you can just eat the whole thing,” she explained.
“So if I have a craving, I’ll just go to the refrigerator and just have a piece of fruit and then I’ll eat it.
That’s what it’s about.
It’s about the flavor and texture of it.”
Katie hopes to one day open her own restaurant, but for now she is focused on helping her children have fun.
“They love to eat and play and play with their friends,” Katie explained.
Katie has already started a YouTube channel with the help of her sister and niece and hopes to expand to other parts of the country in the near future.
“Hopefully we can start to spread the word around the country and I think I can have something really exciting,” Katie joked.
“Even if I never open my own restaurant.
I can just open the YouTube channel and we can just go around and get more followers and hopefully have a YouTube audience of some sort.”
Katie’s grandma will be grilling the family’s Thanksgiving dinner for her fourth birthday this weekend.
The family’s next stop is the town of North Reading, Pennsylvania where Katie grew her culinary skills.
Katie says her grandmother will cook the Thanksgiving dinner, but they are hoping to add a side dish to their meal for a little extra special touch.
“Our grandma has been a big part of our family, she’s been very involved in all the food that we’ve had, and we would love to add something to her Thanksgiving dinner that we haven’t had,” Katie recalled.
Katie plans to share the recipe on her YouTube channel once it’s up and running.
“She’s been really involved with cooking the Thanksgiving table, so if I can bring something to that table that she knows she likes and has fun with, I’d be really happy,” she continued.
